Add egg, vanilla and cinnamon to a wide shallow mixing bowl and whisk ingredients together. Add milk and mix into egg mixture.
Dip each slice of bread 1 at a time into egg mixture, turning to coat both sides evenly.
Cook coated bread slices on a lightly greased nonstick griddle or skillet over a medium heat until browned on both sides.
Serve with your favorite syrup.
