Pop 3 quarts of popcorn
Pick out and discard any un-popped kernels
Place all the popped popcorn into a large paper bag
In a large microwave-safe container mix the brown sugar, butter, corn syrup, salt, and vanilla together and then microwave on high for 2 minutes
Stir well and microwave for another 2 minutes or until boiling
Immediately stir the baking soda into the hot caramel. (the caramel will get foamy)
Pour over the popcorn in the bag. Fold the top of the paper bag over tightly and shake well
Place the bag in the microwave and cook for 1 minute
Shake the bag vigorously and microwave for another 45-60 more seconds but check it at 45 seconds to make sure it’s not burning
Pour the caramel corn out onto the baking sheets lined with wax paper or silicone pan liners. Break up and clumps and cool completely

After the caramel corn cools, if it's not crisp, just put it back in the bag and microwave for another 30 seconds or so.
