There are not many things that can take your mind home to mom’s kitchen like the smell of breakfast cooking in the morning. Especially when it involves a stack of light, fluffy, and delicious homemade pancakes.

Ingredients
Instructions
Whisk
In a medium-sized mixing bowl, add self-rising flour, sugar, and baking soda. Whisk ingredients well to blend.
Combine
Add egg, melted butter or oil, and buttermilk. Using a spatula, scrape the sides of the bowl as you mix and combine all ingredients well. A few lumps are fine.
Rest
Let the batter rest for about five minutes before making the pancakes.
Heat
Heat a large griddle or skillet to medium or medium-high heat. Your pan is ready when a drop of water dropped onto the surface of the pan dances across the surface. Brush the pan lightly with vegetable oil, or spray with non-stick baking spray.
Cook
For each average-sized pancake, pour 1/2 to 3/4 cup of the pancake batter onto the griddle. Flip the pancake when it becomes bubbly, and the edges begin to lose their shine. Cooking the second side until it is a golden brown.
Serve
Serve hot with your favorite toppings.
