For me, potatoes are just one of those all-time favorite comfort foods. There are endless ways to prepare them alone, and no end to the number of ways to use them in other recipes.
One of my favorite recipes though has got to be mashed potatoes. Quick, simple, and so easy to make.
Easy Homemade Mashed Potato Recipe
Follow this easy for homemade mashed potatoes and you'll never need to buy those frozen, or instant mashed potatoes again!

Prep
Peel and dice 2 pounds of potatoes into 1 or 2-inch cubes
Cook
In a large pot cover potatoes with water and bring to a boil. Reduce heat and simmer potatoes for 10 to 15 minutes or until fork tender.
Add
Drain potatoes and place them into a large bowl. Add milk,butter, salt and pepper.
Mash
Using a handheld potato masher (or electric mixer) mash the potatoes until they are light and fluffy.
